  1. Whisk the batter until thin and pourable — closer to crepe batter than pancake. Lumps out, then rest it 10 min.
  2. Heat the takoyaki pan on medium-high and brush EVERY hole generously with oil until it shimmers.
  3. Pour batter to overflowing — yes, over the edges of the holes, it's supposed to flood. Drop octopus, spring onion, ginger and tenkasu into each hole.
  4. Wait 2 min until the bottoms set, then run a skewer around each ball, tucking the overflow in as you flip it 90°. Uncooked batter spills into the hole and builds the sphere.
  5. Keep turning every 30–60 seconds for ~6 min until they're golden, round and crisp all over. The first batch is always ugly. Tradition.
  6. Sauce, mayo zigzag, bonito flakes (watch them dance), aonori. Serve molten — and warn people, because nobody ever waits.
