  1. Salt the chopped cabbage, wait 10 min, then squeeze the water out with your hands — wet cabbage = burst dumplings.
  2. Mix pork, cabbage, garlic, ginger, spring onion and seasonings; stir in ONE direction until sticky, about 1 min.
  3. Put a teaspoon (no more!) of filling in a wrapper, wet the edge with a finger, fold and pinch 4–5 pleats. Ugly ones taste identical.
  4. Heat 1 tbsp oil in a lidded pan on medium-high; line the gyoza up flat-side down and fry 2–3 min until the bottoms are deep gold.
  5. Pour in ¼ cup water, slam the lid on, and steam 4–5 min until the wrappers turn translucent.
  6. Lid off for a final minute to re-crisp the bottoms. Serve crispy-side up with the dip. Count how many each person eats — there will be disputes.
