
🇯🇵 How to Make Takoyaki
Craving Takoyaki? On FoodNeverComes the food never actually comes — so here's how to make real Takoyaki at home, in about 30 min, with stuff you probably already have.
🛒 Ingredients

- Batter: 1 cup flour + 2 cups cold dashi + 1 egg + 1 tsp soy
- 150g cooked octopus, in 1cm dice (or shrimp/cheese/sausage — no takoyaki police here)
- 2 spring onions, finely chopped + 2 tbsp pickled red ginger, chopped
- tenkasu (tempura crumbs) if you have them
- takoyaki sauce (or tonkatsu sauce), Kewpie mayo, bonito flakes, aonori
- oil + a takoyaki pan (a cake-pop pan works in a pinch)
👩🍳 Method
- Whisk the batter until thin and pourable — closer to crepe batter than pancake. Lumps out, then rest it 10 min.
- Heat the takoyaki pan on medium-high and brush EVERY hole generously with oil until it shimmers.
- Pour batter to overflowing — yes, over the edges of the holes, it's supposed to flood. Drop octopus, spring onion, ginger and tenkasu into each hole.
- Wait 2 min until the bottoms set, then run a skewer around each ball, tucking the overflow in as you flip it 90°. Uncooked batter spills into the hole and builds the sphere.
- Keep turning every 30–60 seconds for ~6 min until they're golden, round and crisp all over. The first batch is always ugly. Tradition.
- Sauce, mayo zigzag, bonito flakes (watch them dance), aonori. Serve molten — and warn people, because nobody ever waits.
