- 250g flour
- 50g butter, melted
- 1 egg
- 100ml warm water
- ½ tsp salt
- 200g queso fresco or mozzarella, in fingers
- oil for frying
- guacamole to dip
👩🍳 Method
- Mix the flour, butter, egg, water and salt into a smooth dough and rest it 20 min.
- Roll it thin and cut into strips about 12cm by 5cm.
- Lay a finger of cheese diagonally at one end and roll it up tightly, sealing the ends with wet fingers.
- The seal matters. Any gap and the cheese escapes into the oil and takes the tequeño with it.
- Fry at 180°C for 2–3 min until golden and blistered.
- Drain and eat hot, dipped in guacamole. Cold tequeños are a different, sadder food.
The food never comes — but this time, you make it. 🍳
