  1. Stir the sauce together until the sugar dissolves — taste it: sweet-spicy, not raw-hot. Add ½ tsp vinegar if you like tang.
  2. Salt the cucumber slices and let them sit 5 min, then squeeze dry — this keeps the bowl from going watery.
  3. Blanch spinach 30 seconds in boiling water, squeeze VERY dry, season with a drop of sesame oil and salt.
  4. Stir-fry the carrot 1–2 min until just bendy; if using beef, fry it hot with 1 tsp soy until browned.
  5. Fry the egg in a little oil until the edges are crispy but the yolk is still runny — the yolk is your second sauce.
  6. Pile warm rice in a bowl and arrange every topping in its own little wedge (that's the bibim look), egg in the middle.
  7. Bring it to the table pretty, then destroy it: add the sauce and mix hard for a full 30 seconds. Every grain should turn orange.
