- 300g dried chickpeas, soaked overnight
- 300g beef shin
- 1 chicken quarter
- 100g smoked pork belly
- 1 chorizo
- 2 carrots, 1 turnip, 2 potatoes
- ¼ cabbage, shredded
- 100g small pasta (for the soup course)
👩🍳 Method
- Put the drained chickpeas, beef, chicken and pork in a big pot, cover with cold water, bring to the boil and skim.
- Simmer 2 hrs, topping up with hot water — cold water toughens the chickpeas.
- Add the root vegetables and chorizo, cook 30 min more, then the potatoes for the last 20.
- Fry the cabbage separately in a little garlic and oil so it keeps its texture.
- Strain off a good ladleful of broth per person and cook the pasta in it. That soup is course one.
- Course two is everything else, piled on a platter. This is one dish pretending to be a full meal, which it is.
