
🇪🇸 How to Make Patatas Bravas

- 4 potatoes, cut into rough 3cm chunks
- oil for frying
- Brava sauce: 1 tbsp olive oil, 1 tbsp flour, 1 tbsp sweet paprika, ½ tsp hot paprika
- 250ml chicken stock
- 1 tsp sherry vinegar
- salt
👩🍳 Method
- Boil the potato chunks 8 min until just tender, then drain and let them steam-dry completely. Wet potatoes never crisp.
- Fry them in hot oil until deep golden, 6–8 min. Or roast at 220°C for 35 min.
- Sauce: warm the oil, stir in the flour for 1 min, then both paprikas off the heat so they don't burn.
- Whisk in the stock, return to the heat and simmer to a pourable sauce. Sharpen with the vinegar.
- Salt the potatoes hard the moment they come out of the oil.
- Sauce over the top, not underneath — you want the crunch to survive to the table.
