- 400g dried fabes or butter beans, soaked overnight
- 200g smoked pork shoulder
- 1 cooking chorizo
- 1 morcilla (blood sausage), or skip it
- 1 onion, halved
- 2 cloves garlic
- 1 tsp paprika
- a pinch of saffron
👩🍳 Method
- Drain the soaked beans, put them in a pot with the meats, onion and garlic, and cover with cold water by 3cm.
- Bring to the boil, skim the foam off carefully, then drop to the barest simmer.
- Cook 90 min–2 hrs. Never stir with a spoon — shake the whole pot instead, or the beans break up.
- Twice during cooking, add a splash of cold water to shock it. Spaniards insist this keeps the beans whole.
- Add the paprika and saffron in the last 20 min.
- Rest it off the heat 15 min before eating. It thickens as it sits.
