- 60g butter
- 80g flour
- 500ml whole milk, warm
- 100g jamón serrano, finely chopped
- a grating of nutmeg
- flour, 2 beaten eggs and breadcrumbs, to coat
- oil for frying
👩🍳 Method
- Melt the butter, fry the jamón 2 min, then stir in the flour and cook 2 min.
- Add the warm milk a splash at a time, beating hard. It will look wrong, then suddenly right.
- Cook, stirring, 10 min until the béchamel pulls away from the pan in one mass. Season with nutmeg.
- Spread in a tray, press cling film onto the surface and chill at least 3 hrs. It must be cold and stiff.
- Roll into fat fingers, then flour, egg and breadcrumb each one. Double-coat any that look fragile.
- Fry at 180°C for 2 min until deep gold. Molten inside — wait a minute before eating one.
