🛒 Ingredients

- 4 ripe tomatoes, in thick wedges
- 1 cucumber, in thick half-moons
- ½ red onion, sliced thin
- a handful of Kalamata olives
- 1 thick slab of feta — never crumbled
- 2 tbsp good olive oil
- 1 tsp dried oregano
- salt
👩🍳 Method
- Cut the tomatoes and cucumber in big, confident pieces. This is not a salad of tiny cubes.
- Salt the tomatoes and let them sit 5 min so they release some juice.
- Toss with the onion and olives. There is no lettuce in this salad and never has been.
- Lay the whole slab of feta on top. Do not stir it in.
- Olive oil over everything, then the oregano crushed between your fingers over the feta.
- The tomato juice and oil in the bottom of the bowl is the dressing, and bread is how you get it.
