
🇵🇭 How to Make Kare-Kare
Craving Kare-Kare? On FoodNeverComes the food never actually comes — so here's how to make real Kare-Kare at home, in about 2 hrs 30 min, with stuff you probably already have.
🛒 Ingredients

- 1kg oxtail, in sections
- 100g peanut butter
- 50g ground toasted rice
- 1 onion, chopped
- 4 cloves garlic
- 1 aubergine, 100g green beans, 1 bunch pak choi
- 2 tbsp annatto oil
- bagoong (shrimp paste) to serve
👩🍳 Method
- Simmer the oxtail 2 hrs until it falls off the bone. Keep 1L of the cooking liquid.
- Fry the onion and garlic in the annatto oil, which is what gives kare-kare its orange colour.
- Stir in the peanut butter and ground toasted rice, then loosen with the reserved stock into a thick, velvety sauce.
- Return the oxtail and simmer 15 min.
- Add the vegetables and cook only until just tender — they should keep their colour.
- Crucially, the stew itself is barely seasoned. The salt comes entirely from the bagoong served on the side.
