- Use real cultured karnemelk, not milk soured with lemon juice. The tang is from live cultures and the substitute tastes like a mistake.
- Keep it properly cold. Buttermilk at room temperature turns unpleasantly sour-sharp within minutes.
- Shake or whisk the bottle before pouring — it separates on standing and the thick part sits at the bottom.
- Pour into a tall glass. That is genuinely it; the Dutch drink it plain and cold with lunch.
- If you are easing into it, a pinch of salt or a spoon of brown sugar takes the edge off without making it a dessert.
- Serve alongside rye bread and cheese. It is drunk as an everyday table drink here in a way it is almost nowhere else in Europe.
