
🇵🇱 How to Make Kopytka

- 700g floury potatoes
- 250g flour, plus more for dusting
- 1 egg
- 1 tsp salt
- butter and breadcrumbs to finish
👩🍳 Method
- Boil the potatoes whole in their skins, then peel and rice them while hot.
- Let them cool. Warm potato absorbs far more flour, and more flour means heavier kopytka.
- Work in the flour, egg and salt with a light hand until it just comes together. Overworking makes them bouncy.
- Roll into ropes 2cm thick and cut diagonally into the little hoof shapes the name refers to.
- Boil in salted water; they are ready about a minute after they float.
- Toss in butter with toasted breadcrumbs. Also excellent fried the next day.
