- 12 quail eggs, boiled and peeled
- 100g flour
- 100g cornflour
- 1 tsp orange or annatto food colouring
- 150ml water
- oil for frying
- Dip: vinegar, soy, onion, chilli
👩🍳 Method
- Toss the peeled quail eggs in a little plain flour first — batter will not stick to a bare wet egg.
- Whisk the flour, cornflour, colouring and water into a batter about the thickness of double cream.
- Heat the oil to 180°C.
- Dip each egg and lower it straight in. Fry 2 min until the coating puffs and sets bright orange.
- Do a few at a time so the oil stays hot.
- Skewer three to a stick and dunk in the sharp vinegar dip. Kwek-kwek uses quail eggs; the chicken-egg version is called tokneneng.
