  1. Toss the peeled quail eggs in a little plain flour first — batter will not stick to a bare wet egg.
  2. Whisk the flour, cornflour, colouring and water into a batter about the thickness of double cream.
  3. Heat the oil to 180°C.
  4. Dip each egg and lower it straight in. Fry 2 min until the coating puffs and sets bright orange.
  5. Do a few at a time so the oil stays hot.
  6. Skewer three to a stick and dunk in the sharp vinegar dip. Kwek-kwek uses quail eggs; the chicken-egg version is called tokneneng.
