- 1kg pork belly, in one slab
- 2 bay leaves
- 1 tbsp peppercorns
- 2 tbsp salt
- oil for deep frying
- Dip: soy sauce, vinegar, chopped onion and chilli
👩🍳 Method
- Simmer the pork belly whole with the bay, peppercorns and salt for 45 min until tender.
- Take it out and let it cool. Then — this matters — leave it uncovered in the fridge overnight so the skin dries out completely.
- Bone-dry skin is the entire difference between crackling and chewy disappointment.
- Pat it dry once more and lower carefully into 180°C oil. It will spit violently; use a lid as a shield.
- Fry 10–12 min until the skin blisters and goes deep gold.
- Rest 5 min, then chop with a cleaver. Serve with the sharp soy-vinegar dip.
