- 300g flour
- 7g instant yeast
- 300ml warm water
- 1 tsp sugar, ½ tsp salt
- oil for deep frying
- honey, warmed
- cinnamon and crushed walnuts
👩🍳 Method
- Whisk the flour, yeast, sugar, salt and water into a very loose, sticky batter — nearer a thick pancake batter than a dough.
- Cover and leave somewhere warm 1 hr until bubbly and roughly doubled.
- Heat oil to 175°C. Wet your hand, squeeze a walnut-sized blob of batter up between thumb and finger and flick it in with a wet spoon.
- Fry until deep gold all over, 3 min, turning them as they bob.
- Drain briefly, then drown in warm honey while still hot.
- Cinnamon and walnuts on top. They go leathery within the hour, so this is a make-and-eat dessert.
The food never comes — but this time, you make it. 🍳
