- 500g strong flour
- 50g sugar
- 7g instant yeast
- 250ml warm milk
- 4 egg yolks
- 80g butter, melted
- 2 tbsp spirit or rum (stops them soaking up oil)
- rose jam or plum butter
- oil for frying, icing sugar
👩🍳 Method
- Make a soft, enriched dough with everything except the jam and oil. Knead 10 min — it will be sticky and that is correct.
- Prove 1 hr until doubled.
- Roll to 1.5cm, cut rounds, and prove again 30 min on a floured tray. Under-proved pączki are dense.
- Fry at 175°C. Put them in top-side down, covered, for 90 seconds, then uncovered on the other side. The lid is what makes them puff.
- The pale ring around the middle is the mark of a properly fried pączek.
- Cool slightly, then pipe jam into the side. Icing sugar or a lemon glaze over.
The food never comes — but this time, you make it. 🍳
