
🇯🇵 How to Make Ramen
Craving Ramen? On FoodNeverComes the food never actually comes — so here's how to make real Ramen at home, in about 20 min, with stuff you probably already have.
🛒 Ingredients

- 1 pack fresh or instant ramen noodles (bin the flavour sachet)
- 2 cups (500ml) good chicken stock
- 1 tbsp soy sauce + 1 tsp sesame oil
- 1 tsp miso paste
- 1 clove garlic + a thumb of ginger, grated
- 1 egg
- toppings: spring onion, corn, nori, a knob of butter, leftover pork if you have it
👩🍳 Method
- Jammy egg first: lower the egg into boiling water for exactly 6½ minutes, then straight into iced water. Peel when cool.
- Simmer the stock with the garlic and ginger for 5 min so it actually tastes of something.
- Kill the heat, then whisk in miso, soy and sesame oil. Never boil miso — it goes flat and loses its aroma.
- Cook the noodles in separate boiling water 30–60 sec less than the pack says, then drain well. Cooking them in the broth turns it starchy and dull.
- Noodles into the bowl, hot broth over. Work fast — ramen is a race against soggy.
- Halve the egg on top, pile on the toppings, add the butter for a tonkotsu-ish richness. Slurping is correct technique.
