
🇳🇬 How to Make Suya
Craving Suya? On FoodNeverComes the food never actually comes — so here's how to make real Suya at home, in about 30 min + 2 hr marinating, with stuff you probably already have.
🛒 Ingredients

- 600g beef sirloin, sliced very thin against the grain
- Yaji: ½ cup roasted groundnuts, blitzed to a powder
- 1 tbsp cayenne
- 1 tsp ginger powder + 1 tsp garlic powder
- 1 tsp smoked paprika
- 1 stock cube + salt
- 2 tbsp vegetable oil
- sliced onion and tomato, to serve
👩🍳 Method
- Blitz the groundnuts in short pulses and stop the moment it is powder. Two seconds longer and you have peanut butter, which will not coat.
- Blot the oil out of the groundnut powder with kitchen paper if it looks greasy, then mix in every other spice. That is yaji.
- Toss the thin beef with oil and half the yaji. Marinate 2 hours minimum, overnight is better.
- Thread onto skewers, packing the meat flat rather than bunched so it cooks evenly.
- Grill over charcoal or under a very hot broiler, 3–4 min a side. You want char at the edges, not a slow bake.
- Dust with the remaining dry yaji the moment it comes off the heat, and serve with raw onion and tomato in newspaper. Roadside suya is always sold at night, for good reason — it needs the smoke.
