- 500ml whole milk
- 100g dark chocolate (54–70%), chopped fine
- 1 tbsp cocoa powder
- 1 tbsp sugar, or to taste
- a pinch of salt
- whipped cream (slagroom), to serve

- Warm the milk gently to just below a simmer. Never let it boil — boiled milk gets a skin and a scorched edge that no amount of chocolate hides.
- Whisk the cocoa and sugar with a few tablespoons of the warm milk into a smooth paste first. Adding dry cocoa straight to hot milk gives you lumps.
- Return the paste to the pan and whisk it in.
- Take the pan off the heat and add the chopped chocolate. Let it sit 1 min, then whisk until glossy. Off the heat is the whole technique — chocolate seizes over direct heat.
- Add the pinch of salt and whisk hard, or blitz briefly, to build a light foam.
- Pour into tall glasses and pile whipped cream on top. Ordering it 'met slagroom' is the default in a Dutch café, not an upgrade.
