
🇮🇹 How to Make Carbonara
Craving Carbonara? On FoodNeverComes the food never actually comes — so here's how to make real Carbonara at home, in about 20 min, with stuff you probably already have.
🛒 Ingredients

- 200g spaghetti
- 100g pancetta or guanciale (bacon works), cut into little batons
- 2 whole eggs + 1 extra yolk
- 50g pecorino or parmesan, finely grated, plus extra
- a scandalous amount of coarse black pepper
- NO cream. Really. None.
👩🍳 Method
- Boil the spaghetti in well-salted water. Before draining, SAVE A FULL MUG of the cloudy pasta water — it's the sauce's secret ingredient.
- While the pasta cooks, fry the pancetta from a cold pan on medium until the fat renders and it's crisp, about 5 min. Kill the heat.
- Whisk the eggs, yolk, cheese and lots of pepper in a bowl until it looks like wet sand.
- The drained pasta goes into the pancetta pan (heat still OFF); toss in the fat for 30 seconds and let the sizzling stop.
- Pour in the egg mix while tossing fast, adding splashes of pasta water until it becomes a glossy cream that coats every strand. Residual heat cooks it; direct heat scrambles it — the pan must never go back on the flame.
- Serve instantly with more cheese and pepper. Silky = you nailed it. Scrambled = call it 'breakfast pasta' and try again tomorrow.
