- 500g minced beef and pork mixed
- 1 egg
- 60g breadcrumbs soaked in 60ml milk
- 1 small onion, grated
- 1 tsp mustard
- 1 tsp nutmeg, salt, plenty of black pepper
- 50g butter
- 250ml beef stock
- 1 tbsp flour
👩🍳 Method
- Soak the breadcrumbs in the milk until completely soft, then squeeze lightly. This panade is what keeps the ball juicy for the long braise.
- Mix everything by hand but stop as soon as it is combined. Overmixed mince goes rubbery.
- Shape into four balls the size of a tennis ball. Dutch gehaktballen are deliberately large — one per person, not a plate of small ones.
- Brown them in the butter on all sides over medium heat, about 8 min. Turn gently.
- Add the stock, cover, and simmer very low for 35–40 min, turning once. They finish cooking in the liquid, not the pan.
- Lift them out, whisk the flour into the pan juices and let the gravy thicken for 3 min. Serve with potatoes, apple sauce and the gravy poured over.
