
🇮🇹 How to Make Gnocchi
Craving Gnocchi? On FoodNeverComes the food never actually comes — so here's how to make real Gnocchi at home, in about 60 min, with stuff you probably already have.
🛒 Ingredients

- 4 floury potatoes (about 800g) — bake them, don't boil
- 1 cup flour + extra for dusting
- 1 egg yolk
- ¾ tsp salt
- 4 tbsp butter + 10 sage leaves + parmesan
👩🍳 Method
- Bake the potatoes at 200°C for 1 hour. Baking keeps them dry, and dry potato is the secret to light gnocchi.
- Scoop the flesh while hot, mash it fine, and let the steam escape for 5 min.
- Add salt, flour and the yolk. Knead for only 30 seconds — the less you touch it, the softer they'll be.
- Roll into thumb-thick ropes, cut into little pillows. Press a fork on top if you want the classic ridges.
- Boil in salted water. When they float, count 30 seconds, then scoop them out.
- Melt the butter with sage until it smells nutty, toss the gnocchi in, shower with parmesan. Pillowy. You'll be proud.
