- 300g flour, 1 egg, 120ml water, ½ tsp salt
- 250g lamb or beef mince
- 1 onion, grated and squeezed dry
- 500g thick yoghurt with 2 cloves crushed garlic
- 60g butter, 1 tsp pul biber, 1 tsp dried mint
- sumac to finish
👩🍳 Method
- Knead the flour, egg, water and salt into a firm dough. Rest it 30 min under a bowl.
- Mix the mince with the squeezed onion and plenty of seasoning.
- Roll the dough paper thin and cut into 2cm squares. Yes, 2cm — mantı are meant to be tiny.
- Put a pea-sized dot of filling on each and pinch the four corners up into a little parcel.
- Boil in salted water 10–12 min until they float and the dough turns translucent.
- Drain, spoon garlic yoghurt over, then pour over butter sizzled with pul biber and mint. Sumac on top.
