🛒 Ingredients

- 500g plain flour
- 7g instant yeast
- 350ml lukewarm milk
- 1 egg
- 1 tsp salt
- 150g raisins and currants, soaked in warm water 30 min then drained
- 1 apple, finely diced (optional)
- oil for deep frying
- icing sugar
👩🍳 Method
- Make a thick, sticky batter with the flour, yeast, salt, egg and lukewarm milk. It is a batter, not a dough — it should be too wet to handle.
- Beat it hard for 3 min to develop some structure, then fold in the drained raisins and apple.
- Cover and prove in a warm place for 1 hour until doubled and full of bubbles. Then knock it back and prove 30 min more.
- Dry the soaked fruit properly before it goes in. Wet raisins make the oil spit violently and leave hollow patches.
- Heat the oil to 175°C exactly. Too hot and you get a dark shell around raw batter — the classic oliebol failure.
- Scoop with two wet spoons and fry 6–8 min, turning, until deep brown all over. Drain, cool a little, and bury in icing sugar. Eaten on New Year's Eve, from a stand, in the cold.
