  1. Make a thick, sticky batter with the flour, yeast, salt, egg and lukewarm milk. It is a batter, not a dough — it should be too wet to handle.
  2. Beat it hard for 3 min to develop some structure, then fold in the drained raisins and apple.
  3. Cover and prove in a warm place for 1 hour until doubled and full of bubbles. Then knock it back and prove 30 min more.
  4. Dry the soaked fruit properly before it goes in. Wet raisins make the oil spit violently and leave hollow patches.
  5. Heat the oil to 175°C exactly. Too hot and you get a dark shell around raw batter — the classic oliebol failure.
  6. Scoop with two wet spoons and fry 6–8 min, turning, until deep brown all over. Drain, cool a little, and bury in icing sugar. Eaten on New Year's Eve, from a stand, in the cold.
