
🇪🇸 How to Make Paella Valenciana

🛒 Ingredients

- 300g bomba or other short-grain paella rice
- 1L hot chicken stock
- 1 chicken thigh per person, cut in big pieces
- 150g green beans, halved
- 100g butter beans
- 2 tomatoes, grated (skins discarded)
- 1 tsp sweet paprika
- a good pinch of saffron, soaked in a splash of warm stock
- olive oil, salt
👩🍳 Method
- Brown the chicken in olive oil in the widest pan you own. Take your time — this is most of the flavour.
- Add the beans, fry 3 min, then the grated tomato and paprika. Cook until it darkens and smells sweet.
- Pour in the stock and saffron, season well, and bring to a strong simmer.
- Scatter the rice evenly across the pan. Do NOT stir it again — from here on the rice is left alone.
- Simmer hard 10 min, then low 8 min, then off the heat, covered with a tea towel, 5 min.
- The crust on the bottom is called socarrat and is the best part. Turn the heat up for the last 60 seconds to get it.
