- 300g flour egg noodles (canton)
- 200g chicken or pork, sliced
- 100g prawns
- 1 carrot, julienned
- 100g cabbage, shredded
- 100g green beans
- 3 tbsp soy sauce, 1 tbsp oyster sauce
- 500ml chicken stock
- calamansi to serve
👩🍳 Method
- Fry the meat and prawns in a hot wok, then set aside.
- Cook the carrot and beans 2 min, then the cabbage for 1 min. They should stay crunchy.
- Pour in the stock and sauces and bring to the boil.
- Add the dry noodles straight into the simmering liquid and toss constantly as they soften and drink it up, 4–5 min.
- Cooking the noodles in the sauce rather than boiling them separately is what gives pancit its flavour.
- Return the meat, toss through, and finish with calamansi squeezed over. Served at every birthday, for long life.
