  1. Double-fry the chips: 160°C for 6 min, rest, then 190°C for 3 min. Belgian-style thick cut, not shoestring.
  2. Warm the peanut sauce gently and loosen it with a spoon of hot water until it pours but still coats. Cold satésaus seizes into a lump.
  3. Salt the chips the second they come out of the fryer.
  4. Spoon mayonnaise over one half and peanut sauce over the other, then let them run together.
  5. Bury the whole thing under raw diced onion.
  6. The name means 'war fries', which is variously explained as the mess it makes or as postwar snackbar slang. The Netherlands has a national peanut sauce because of Indonesia, and this is where it ended up.
