  1. Whisk both flours, the yeast and salt, then beat in the egg and warm milk to a smooth, thin batter.
  2. Cover and leave to rise 45–60 min until foamy on top. The yeast, not baking powder, is what gives poffertjes their spongy chew — this is the difference from a pancake.
  3. Heat a poffertjespan (a cast-iron plate of shallow dimples) and butter every dimple properly.
  4. Fill each dimple two-thirds. Wait until the top is set around the edge but still wet in the centre.
  5. Flip each one with a fork or skewer — a quick flick, not a scoop. About 1 min a side; they should be pale gold, not brown.
  6. Pile onto a plate, drop a knob of cold butter on top and snow icing sugar over. Served at markets from December onwards, twenty at a time, on a paper plate.
