
🇳🇱 How to Make Poffertjes
Craving Poffertjes? On FoodNeverComes the food never actually comes — so here's how to make real Poffertjes at home, in about 40 min, with stuff you probably already have.
🛒 Ingredients

- 150g buckwheat flour
- 150g plain flour
- 7g instant yeast
- 1 egg
- 400ml warm milk
- ½ tsp salt
- butter for the pan
- icing sugar and a knob of butter, to serve
👩🍳 Method
- Whisk both flours, the yeast and salt, then beat in the egg and warm milk to a smooth, thin batter.
- Cover and leave to rise 45–60 min until foamy on top. The yeast, not baking powder, is what gives poffertjes their spongy chew — this is the difference from a pancake.
- Heat a poffertjespan (a cast-iron plate of shallow dimples) and butter every dimple properly.
- Fill each dimple two-thirds. Wait until the top is set around the edge but still wet in the centre.
- Flip each one with a fork or skewer — a quick flick, not a scoop. About 1 min a side; they should be pale gold, not brown.
- Pile onto a plate, drop a knob of cold butter on top and snow icing sugar over. Served at markets from December onwards, twenty at a time, on a paper plate.
