- 1 whole chicken
- 3 tbsp soy sauce
- 1 tbsp ají panca paste
- 1 tbsp dark beer or vinegar
- 4 cloves garlic, crushed
- 1 tbsp cumin
- 1 tsp paprika, 1 tsp oregano
- juice of 1 lime
👩🍳 Method
- Blend everything except the chicken into a dark, thick marinade.
- Rub it all over and inside the chicken, get it under the skin, and leave overnight. Anything less than 8 hrs and you are just roasting a chicken.
- Bring it to room temperature before cooking.
- Roast at 200°C for 20 min, then drop to 180°C for 50–60 min, basting twice.
- Rest 15 min before carving.
- Serve with chips and the green ají sauce — mayo blitzed with coriander, chilli and lime.
