- 1 octopus (1–1.5kg), cleaned — frozen then thawed is genuinely better
- 2 large potatoes
- 2 tbsp good olive oil
- 1 tbsp sweet paprika
- ½ tsp hot paprika
- coarse sea salt
- 1 bay leaf
👩🍳 Method
- Boil a big pot of water with the bay leaf. Dip the octopus in and out three times before letting it sink — this stops the skin shrinking off.
- Simmer 45–60 min until a skewer slides into the thickest part with no resistance.
- Boil the potatoes in the same water for the last 20 min. They take on the flavour.
- Slice the potatoes into rounds, lay them on a wooden board.
- Snip the octopus into 1cm coins with scissors and pile them on top.
- Drown in olive oil, dust heavily with both paprikas and coarse salt. Eat with cocktail sticks.
