- 2 cups flour + ¾ tsp salt + 4 tbsp oil
- about ½ cup cold water
- 3 boiled potatoes, crumbled
- ½ cup peas
- 1 tsp cumin seeds + 1 tsp garam masala + ¾ tsp salt
- a handful of chopped coriander
- oil for frying
👩🍳 Method
- Rub the 4 tbsp oil into the flour with your fingers, then add water bit by bit to make a firm dough. Rest it 30 min — it needs the nap.
- Fry cumin in 1 tbsp oil for 20 seconds, add peas, potatoes, garam masala and salt. Mash a little, mix in coriander, and let it cool.
- Roll the dough into 4 balls, then flat ovals. Cut each in half — every half becomes one samosa.
- Fold a half into a cone, wet the edge to glue it. Fill with potato, pinch the top shut tight.
- Fry on LOW heat 12–15 min until deep golden. Low and slow is the whole secret — fast frying makes soft shells.
- Let them sit 5 min (they get crispier as they cool). Dip in any chutney or even ketchup — no judgement here.
The food never comes — but this time, you make it. 🍳
