  3. Divide the dough into 12 balls and press each in a hot waffle iron (a thin pizzelle-style iron, not a deep Belgian one) for about 60 seconds.
  4. Here is the part that decides it: while the waffle is still hot and pliable, split it horizontally through the middle with a serrated knife. Wait even a minute and it turns brittle and shatters.
  5. Spread the warm syrup on the cut face and press the two halves back together.
