- 7g instant yeast
- 60ml warm milk

- Syrup: 200g dark brown sugar
- 150g butter
- 4 tbsp golden syrup
- 1 tsp cinnamon + a pinch of salt
👩🍳 Method
- Make a soft yeasted dough with all the dough ingredients, knead 8 min, and let it rise 45 min until doubled.
- Melt the syrup ingredients together and simmer 3 min until smooth and pourable. Keep it warm — cold stroopwafel syrup is unspreadable.
- Divide the dough into 12 balls and press each in a hot waffle iron (a thin pizzelle-style iron, not a deep Belgian one) for about 60 seconds.
- Here is the part that decides it: while the waffle is still hot and pliable, split it horizontally through the middle with a serrated knife. Wait even a minute and it turns brittle and shatters.
- Spread the warm syrup on the cut face and press the two halves back together.
- Trim the edges round. Eat one balanced on top of a hot cup of coffee for a few minutes until the syrup softens — this is not a quirk, it is the intended delivery method.
