
🇬🇷 How to Make Tzatziki

🛒 Ingredients

- 400g thick Greek yoghurt
- 1 cucumber, coarsely grated
- 2 cloves garlic, crushed
- 1 tbsp olive oil
- 1 tsp red wine vinegar
- a small handful of dill
- salt
👩🍳 Method
- Grate the cucumber, salt it and leave it in a sieve for 20 min.
- Wring it out in a tea towel. You will be astonished how much water comes out, and this step is the whole difference between tzatziki and cucumber soup.
- Stir it through the yoghurt with the garlic, oil, vinegar and dill.
- Season, then chill at least an hour — the garlic needs time to spread through.
- Use full-fat yoghurt. Low-fat splits and tastes sour.
- Loosen with a little more oil before serving if it has stiffened.
