- 500g beef mince
- 1 onion + 1 carrot + 1 celery stick, diced small
- 2 tbsp tomato paste + 700g passata
- ½ cup milk (sounds weird, works wonders)
- Béchamel: 4 tbsp butter + 4 tbsp flour + 3 cups milk + a pinch of nutmeg
- 250g lasagne sheets (no-boil is fine)
- 100g parmesan, grated
👩🍳 Method
- Soften the veg in olive oil, 8 min. Add the beef and brown it properly — 6 min, let it catch a little. Browned bits = flavour.
- Add tomato paste, passata, milk and 1 tsp salt. Simmer on low 45 min. Go do something else; the pot is working.
- Béchamel: melt butter, stir in flour 1 min, add milk bit by bit while whisking. 3 min later you have white silk. Nutmeg in.
- Layer in a baking dish: thin ragù first, then sheets → ragù → béchamel → parmesan. Repeat 4 times, end with béchamel and lots of cheese.
- Bake at 180°C for 35–40 min until golden and bubbling at the corners.
- Now the hardest step: wait 15 minutes before cutting. It rewards you with clean, proud slices instead of soup.
The food never comes — but this time, you make it. 🍳
